How to Prepare Aam Panna: A Refreshing and Traditional Indian Drink

Aam panna, also known as Indian lime juice, is a refreshing and traditional drink that is perfect for hot summer days. Made from green limes, water, salt, black salt, and spices, this drink is not only delicious but also has numerous health benefits. In this article, we will guide you through the process of how to prepare aam panna, ensuring that you can enjoy this delightful beverage at home.

Ingredients

Before you start preparing aam panna, gather the following ingredients:

– 4-5 green limes
– 2 liters of water
– 1 teaspoon of rock salt (black salt)
– 1/2 teaspoon of cumin seeds
– 1/2 teaspoon of fennel seeds
– 1/2 teaspoon of black pepper
– 1/2 teaspoon of red chili powder (optional)
– 1/2 teaspoon of sugar or jaggery (optional)
– A handful of mint leaves
– Ice cubes (optional)

Instructions

1. Start by washing the green limes thoroughly and then cut them into small pieces. Make sure to remove any seeds before proceeding.

2. In a large pot, bring 2 liters of water to a boil. Once the water is boiling, add the lime pieces and reduce the heat to a simmer. Let the limes cook for about 10-15 minutes, or until they become soft.

3. While the limes are cooking, crush the cumin seeds, fennel seeds, black pepper, and red chili powder (if using) in a mortar and pestle or a spice grinder. This will help release the flavors of the spices.

4. After the limes have cooked, remove them from the heat and let them cool down slightly. Once cool enough to handle, squeeze the limes to extract the juice into a separate bowl. You should have about 1 cup of lime juice.

5. In the same pot, add the crushed spices, rock salt, and mint leaves. Stir well and let the mixture simmer for another 5 minutes. This will infuse the water with the flavors of the spices.

6. Strain the water through a fine sieve or cheesecloth to remove any remaining lime pieces and spices. Discard the solids.

7. In a serving jar or glass, combine the lime juice, strained water, and sugar or jaggery (if using). Stir well until the sweetener is dissolved.

8. Taste the aam panna and adjust the seasoning by adding more salt, black salt, or sweetener if needed.

9. If desired, add ice cubes to the aam panna for a chilled drink. Serve immediately and enjoy!

Now that you know how to prepare aam panna, you can easily make this refreshing drink at home. It’s a perfect way to beat the summer heat and savor the flavors of traditional Indian cuisine.
