How to Prepare Chole Curry: A Delectable Indian Dish

Ingredients

Before you start cooking, gather the following ingredients:

– 1 cup of dried chickpeas (or 2 cans of chickpeas, drained and rinsed)
– 1 large onion, finely chopped
– 2 cloves of garlic, minced
– 1 inch piece of ginger, grated
– 2 tomatoes, finely chopped
– 1 teaspoon of cumin seeds
– 1 teaspoon of turmeric powder
– 1 teaspoon of red chili powder
– 1 teaspoon of coriander powder
– 1/2 teaspoon of garam masala
– 1/2 teaspoon of amchur powder (dried mango powder)
– 1/4 teaspoon of asafoetida (hing)
– 1/4 teaspoon of fenugreek seeds
– 2 tablespoons of oil
– Salt to taste
– Fresh cilantro leaves for garnishing

Preparation

1. Soak the dried chickpeas in water overnight or for at least 6-8 hours. After soaking, drain and rinse the chickpeas.
2. In a pressure cooker, add the soaked chickpeas, 2 cups of water, and a pinch of salt. Cook for about 10-12 whistles or until the chickpeas are tender. Once cooked, remove from heat and set aside.
3. In a large pan, heat the oil over medium heat. Add the cumin seeds and fenugreek seeds. Once the seeds start to crackle, add the asafoetida and sauté for a few seconds.
4. Add the chopped onions and sauté until they turn golden brown.
5. Add the minced garlic and grated ginger, and sauté for another minute.
6. Add the chopped tomatoes and cook until they are soft and the oil starts to separate from the mixture.
7. Stir in the turmeric powder, red chili powder, coriander powder, and amchur powder. Cook for another 2-3 minutes.
8. Add the cooked chickpeas and 1 cup of water. Stir well and let the curry simmer for about 15-20 minutes on low heat.
9. Add salt to taste and adjust the spices according to your preference. If desired, you can also add a teaspoon of garam masala towards the end.
10. Once the curry has reached your desired consistency, turn off the heat and garnish with fresh cilantro leaves.
