Ingredients
Before you start, gather the following ingredients:
– 1 cup besan (gram flour)
– 1 cup yogurt (preferably plain and thick)
– 1/2 cup water
– 1/4 cup besan for the besan water
– 1/4 cup sugar
– 1/2 teaspoon baking soda
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon mustard seeds
– 1/2 teaspoon fenugreek seeds
– 1/4 teaspoon asafoetida (hing)
– Salt to taste
– 1/4 cup lemon juice
– 1/4 cup chopped green chilies
– 1/4 cup finely chopped onions
– 1/4 cup grated coconut (optional)
– 1/4 cup chopped coriander leaves
– Cooking oil for greasing the pressure cooker
Instructions
1. In a bowl, mix besan and water to form a smooth paste. Set aside.
2. In another bowl, whisk yogurt until smooth. Add sugar, baking soda, turmeric powder, salt, and lemon juice to the yogurt. Mix well.
3. Add the besan paste to the yogurt mixture and mix until well combined. Let the batter sit for about 20 minutes.
4. While the batter is resting, heat a small amount of oil in a pan. Add cumin seeds, mustard seeds, fenugreek seeds, and asafoetida. Once the seeds start to crackle, remove the pan from heat and add the spices to the batter. Mix well.
5. Grease the pressure cooker with cooking oil. Pour the batter into the pressure cooker, ensuring that it is evenly distributed.
6. Close the pressure cooker with the lid and place the weight on top. Cook on high heat for 15-20 minutes. After the first whistle, reduce the heat to low and continue cooking for another 10 minutes.
7. Once done, turn off the heat and let the pressure cooker cool down naturally. Do not open the lid immediately.
8. After the pressure has released, open the lid and check the dhokla. It should be soft and spongy. If it’s too hard, you can place it in the microwave for a few seconds to soften.
9. Garnish the dhokla with chopped green chilies, onions, grated coconut, and coriander leaves. Serve hot with green chutney or tomato sauce.
Now you can enjoy delicious dhokla prepared in a pressure cooker, making it a perfect snack for any occasion. Happy cooking!
