How to Prepare Egg Curry in Andhra Style

Andhra-style egg curry is a flavorful and aromatic dish that is popular in the Andhra Pradesh region of India. Ingredients

Before you start cooking, gather the following ingredients:

– 4 eggs
– 1 large onion, finely chopped
– 2 cloves of garlic, minced
– 1 inch piece of ginger, minced
– 2 green chilies, slit
– 1 tomato, finely chopped
– 1/4 cup of coconut milk
– 1/2 cup of water
– 1 teaspoon of turmeric powder
– 1 teaspoon of red chili powder
– 1/2 teaspoon of garam masala
– 1/2 teaspoon of cumin seeds
– 1/2 teaspoon of coriander powder
– 1/2 teaspoon of fenugreek seeds
– Salt to taste
– 2 tablespoons of oil
– Fresh coriander leaves for garnishing

Preparation

1. Start by hard-boiling the eggs. Place the eggs in a pot, cover them with water, and bring to a boil. Once boiling, reduce the heat and let the eggs simmer for about 10 minutes. After 10 minutes, remove the eggs from the heat and let them cool down. Once cooled, peel the eggs and cut them into half.

2. In a large pan, heat the oil over medium heat. Add the cumin seeds, fenugreek seeds, and allow them to splutter.

3. Add the chopped onions and sauté until they turn golden brown. Then, add the minced garlic and ginger, and sauté for another minute.

4. Add the green chilies and chopped tomatoes. Cook until the tomatoes are soft and the oil starts to separate from the mixture.

5. Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.

6. Add the coconut milk and water. Stir well and let the mixture come to a boil.

7. Reduce the heat and add the hard-boiled egg halves. Cook for about 10 minutes, or until the curry thickens slightly.

8. Finally, add the garam masala and fresh coriander leaves. Stir well and let the curry simmer for another 2-3 minutes.

9. Turn off the heat and serve the Andhra-style egg curry hot, garnished with fresh coriander leaves.
