How to Prepare Achi Soup

Achi soup, also known as achi amala or ogbono soup, is a traditional Nigerian dish that has gained popularity across the globe for its rich and savory flavors. Ingredients

Before you start cooking, gather the following ingredients:

– 1 kg achi fruit
– 500g yam, peeled and cubed
– 200g of smoked fish (optional)
– 100g of dry fish (optional)
– 1 medium onion, finely chopped
– 4 cloves of garlic, minced
– 2 tablespoons of ground crayfish
– 1 tablespoon of ground dry fish
– 2 tablespoons of palm oil
– 2 tablespoons of vegetable oil
– Salt to taste
– Water or vegetable broth
– 1 tablespoon of locust beans (optional)
– 2 tablespoons of ground crayfish (optional)
– 1 teaspoon of ground dry fish (optional)

Instructions

1. Begin by preparing the achi fruit. Soak the achi fruit in warm water for about 30 minutes to soften. After soaking, peel the fruit and remove the seeds.

2. In a large pot, heat the palm oil and vegetable oil over medium heat. Add the chopped onions and garlic, and sauté until they turn golden brown.

3. Add the smoked fish and dry fish to the pot, if using, and cook until they start to flake. Remove the fish from the pot and set aside.

4. In the same pot, add the yam cubes and cook until they are soft. If you prefer a smoother soup, you can blend the yams and water together in a blender before adding them to the pot.

5. Return the fish to the pot and add the achi fruit. Cook for about 10 minutes, stirring occasionally.

6. Add the locust beans, ground crayfish, and ground dry fish to the pot. Stir well to combine.

7. Add salt to taste and let the soup simmer for another 10 minutes. If the soup is too thick, you can add more water or vegetable broth to reach your desired consistency.

8. Finally, add the blended ingredients (if you blended the yams and water earlier) back to the pot. Stir well and let the soup simmer for a few more minutes until all the flavors are well incorporated.

9. Serve the achi soup hot, garnished with a sprinkle of chopped green onions or palm oil. Enjoy with rice, plantain, or your favorite side dish.
