Selecting the Meat

After the final 30 minutes of smoking, remove the ribs from the smoker and let them rest for another 10 minutes. This will help the sauce set and make the ribs easier to slice. Once the ribs are rested, slice them between the bones and serve them with your favorite sides, such as coleslaw, cornbread, or potato salad.
