How to Prepare Biryani in a Cooker

Biryani, a flavorful and aromatic rice dish, is a staple in many Indian households. It is a dish that brings people together, with its rich spices and layers of flavors. While biryani can be prepared in a traditional pot, using a cooker can make the process quicker and more convenient. In this article, we will guide you through the steps on how to prepare biryani in a cooker.

Ingredients

Before you start, gather all the necessary ingredients. Here’s what you will need:

– 1 cup basmati rice
– 2 cups water
– 1 kg mutton or chicken, cut into pieces
– 1 onion, finely chopped
– 2 tomatoes, finely chopped
– 2 tablespoons ginger-garlic paste
– 1 teaspoon red chili powder
– 1 teaspoon turmeric powder
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– 1 teaspoon biryani masala (optional)
– 1/2 cup yogurt
– 1/2 cup oil
– 1/2 cup ghee
– Salt to taste
– 2 green chilies, slit
– 1 tablespoon kasuri methi (dried fenugreek leaves)
– 1 teaspoon saffron threads, soaked in 2 tablespoons of warm milk
– Fresh mint leaves and coriander leaves for garnishing

Preparation

1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes.
2. In a separate bowl, marinate the mutton or chicken with yogurt, salt, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, biryani masala (if using), and kasuri methi. Keep it aside for at least 30 minutes.
3. Heat oil and ghee in a pressure cooker. Add the chopped onions and sauté until they turn golden brown.
4. Add the ginger-garlic paste and sauté for another minute.
5. Add the chopped tomatoes and cook until they become soft and the oil separates.
6. Add the marinated mutton or chicken to the pressure cooker and cook for 10 minutes on medium heat.
7. Add the soaked rice to the pressure cooker and mix gently.
8. Sprinkle the saffron threads and green chilies on top of the rice.
9. Pour the remaining water over the rice and mix gently.
10. Close the lid of the pressure cooker and cook on high heat for 4-5 whistles. Let the pressure release naturally.
11. Once the pressure has released, open the lid and fluff the rice with a fork. Garnish with fresh mint and coriander leaves.
