2. In a large pot, combine the vinegar, water, sugar, salt, mustard seeds, cumin seeds, turmeric powder, green chilies, ginger paste, and garlic paste. Stir the mixture well until the sugar and salt have dissolved.

3. Add the chopped carrots to the pot and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 10-15 minutes, or until the carrots are tender but still hold their shape.
