Instructions

1. Begin by preheating your oven to 375°F (190°C). In a large pot, heat the vegetable oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

2. Place the chicken breasts or thighs in the pot and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set it aside.

3. In the same pot, pour in the chicken broth and water. Add the dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes, or until the chicken is cooked through.

4. While the chicken is simmering, prepare the dumpling dough. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

5. Gradually add the ice water to the flour mixture, stirring until a dough forms. The dough should be slightly sticky but not too wet. If the dough is too dry, add a little more water; if it’s too wet, add a little more flour.
